Just as a hypothetical, if you delisted someone on Twitter because they’re cross-posting to Mastodon and you’re keeping up with both on a regular basis, is that poor social media manners?

I think it depends on the person. If someone is cross posting to the Fediverse, then I’m going to heed that one first. But that’s just me.
